Ingredients

¼ cup water
½ tsp honey
1 tbsp active dry yeast
1 ¾ cups warm water
2 tbsp honey
¼ cup vegetable oil
1 tbsp lemon juice
2 tsp salt
1 cup Rogers 9 Grain cereal
4 ½ ‐ 5 cups ROGERS UNBLEACHED ALL PURPOSE FLOUR
1 egg white, lightly whisked
2 tbsp Rogers 9 Grain cereal
Rogers 9 Grain cereal gives this loaf great texture and a fibre boost.

Instructions

1.Dissolve yeast in ½ tsp honey and ¼ cup warm water and let stand 10 minutes.
2.Meanwhile, measure warm water into a large mixing large bowl; add 2 tablespoons honey, oil, lemon juice and salt. Add yeast mixture and mix well. Stir in Rogers 9 Grain cereal and sufficient flour to make a soft, workable dough.
3.Turn dough out on lightly floured surface; knead 10‐15 minutes until dough is smooth and elastic.
4.Place dough in an oiled bowl, turning once to coat dough with oil; cover with plastic wrap and allow to rise for 1 hour, or until doubled in bulk.
5.Punch down dough and divide into two equal portions. Shape each porJon into a ball and let rest 30 minutes.
6.Shape into loaves and place in greased 1.5 L (8 ½ “ x 4 ½ “) loaf pans, or make 2 free‐standing round loaves placed seam‐side down on parchment‐lined baking sheet. Cover with plastic wrap and let rise 1 hour until doubled in volume.
7.Preheat oven to 375ºF (190ºC). Brush loaves with egg white, and sprinkle 1 tablespoon of Rogers 9 Grain cereal over each. Use a knife or scissors to make ½‐inch deep slashes in round loaves, if making. Bake in centre of oven for 35‐40 minutes until bottom sounds hollow when tapped. Cool on wire racks.
