Ingredients

For the Cake:
1 cup (240 ml) milk
4 Earl Grey tea bags (or 2 tbsp loose-leaf tea)
1 ½ cups (190 g) ROGERS FOODS ALL PURPOSE FLOUR
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup (115 g) unsalted butter, softened
¾ cup (150 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract

For the Honey Glaze:
1 cup (120 g) powdered sugar
2–3 tbsp honey
1–2 tbsp warm milk or tea (for thinning)

Instructions

1.Infuse the Milk: Bring milk to a gentle simmer. Add Earl Grey tea bags and steep for 10 minutes. Squeeze out the tea bags and let the milk cool to room temperature.
2.Preheat & Prep: Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
3.Mix Dry Ingredients: Whisk together flour, baking powder, baking soda, and salt in a bowl. Set aside.
4.Cream Butter & Sugar: In a large bowl, cream butter and sugar until light and fluffy (about 2–3 minutes).
5.Add Eggs & Vanilla: Beat in eggs one at a time, then add vanilla extract.
6.Combine: Add the flour mixture in 3 parts, alternating with the cooled tea-infused milk. Begin and end with flour. Do not over-mix.
7.Bake: Pour the batter into the prepared pan and smooth the top. Bake for 45–50 minutes, or until a toothpick comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.
8.Make the Glaze: Whisk powdered sugar, honey, and milk/tea until smooth and pourable. Drizzle over cooled cake.
