
| 1 1/2 cups ROGERS 100% WHOLE GRAIN WHOLE WHEAT FLOUR | |
| 3/4 cup ground flax seed | |
| 3/4 cup ROGERS OAT BRAN | |
| 1 cup brown sugar or coconut sugar | |
| 2 tsp. baking soda | |
| 1 tsp. baking powder | |
| 2 tsp. cinnamon | |
| 1 1/2 cups shredded carrots | |
| 2 medium apples, grated | |
| 1 1/2 cups raisins | |
| 3/4 cup buttermilk | |
| 2 eggs, beaten | |
| 1 tsp. vanilla | |
| 2 tbsp. oil |
These hearty muffins are virtually a meal in a muffin! They are incredibly moist without the use of butter. Nutritious ingredients like Rogers Oat Bran, carrots & apples make it an excellent choice for a morning snack or midday pick me up.
| 1. | Preheat oven to 350F. Prepare muffin tin. |
| 2. | Mix flour, flax seed, oat bran, sugar, baking soda, baking powder, cinnamon together. Add in carrots, apples and raisins. |
| 3. | In another bowl, beat liquid ingredients together. Add to dry mixture and mix (without over mixing). |
| 4. | Bake for 20-25 minutes. |
| 5. | Take out and let cool for 10 minutes. |
