1 1/4 cups Rogers Foods Whole Grain Whole Wheat Flour
3/4 cup Rogers Foods Wheat Bran
1 1/2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 cup cooked and mashed sweet potato, cooled
2 large eggs
1/3 cup pure maple syrup
1/2 cup unsweetened applesauce
1/3 cup vegetable oil
1/2 cup milk or unsweetened milk alternative
1 teaspoon vanilla
1/2 cup chopped pecans
Optional topping:
2 tablespoons chopped pecans
2 tablespoons pumpkin seeds

Instructions

1.Preheat oven to 375 degrees F. Line or lightly grease a 12-cup muffin pan.
2.In a large bowl, combine whole grain whole wheat flour, wheat bran, baking powder, baking soda, cinnamon, ginger, nutmeg and salt.
3.In another bowl, whisk together mashed sweet potato, eggs, maple syrup, applesauce, oil, milk and vanilla.
4.Pour the wet mixture into the dry ingredients.
5.Stir gently just until combined. Do not overmix.
6.Fold in the chopped pecans.
7.Divide the batter evenly among the 12 muffin cups.
8.Sprinkle each muffin with a little pecan, pumpkin seed and cinnamon mixture.
9.Bake for 20 to 24 minutes, or until the tops spring back lightly and a tester inserted in the center comes out clean.
10.Allow the muffins to cool in the pan for 5 to 10 minutes before transferring them to a cooling rack.
