Ingredients

Cherry Filling: 2 1/2 cups frozen or fresh pitted tart cherries
1/3 cup granulated sugar
1 tbsp lemon juice
2 tbsp cornstarch
1/2 tsp vanilla extract
1/4 tsp almond extract
Oat Crumble: 1 1/2 cups Rogers Foods Large Flake Oats
1 cup Rogers Foods All Purpose Flour
1/2 cup packed brown sugar
1/2 tsp cinnamon
1/4 tsp salt
3/4 cup sliced or chopped almonds
3/4 cup unsalted butter, melted
A delicious balance of tart and sweet, with a juicy cherry filling layered between a buttery crumble made with Rogers Foods Large Flake Oats, Rogers Foods All Purpose Flour and almonds. Crisp, crumbly, fruity and perfect for a homemade fall treat.

Instructions

1.Preheat oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
2.Place cherries, sugar, lemon juice and cornstarch in a small saucepan.
3.Cook over medium heat for about 5-7 minutes, stirring frequently, until the cherries release their juices and the mixture thickens.
4.Remove from heat and stir in vanilla and almond extracts. Set aside to cool slightly.
5.In a large bowl, combine oats, flour, brown sugar, cinnamon, salt and almonds.
6.Pour in melted butter and stir until the mixture forms moist crumbs.
7.Press approximately two-thirds of the oat mixture firmly into the bottom of the prepared pan.
8.Spread the cherry filling evenly over the base.
9.Sprinkle the remaining oat mixture over the cherries, leaving some larger crumble pieces.
10.Bake for 35-40 minutes, until golden brown around the edges and lightly browned on top.
11.Cool completely before cutting into bars.
