Ingredients

1 1/2 cups buttermilk*
1 1/2 cups ROGERS OAT BRAN
1 1/4 cups ROGERS ALL PURPOSE FLOUR
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 cup vegetable oil
1 egg
1/2 cup sugar
1/2 tsp vanilla
1 cup blueberries, fresh or frozen
Delicious blueberry muffins that offer heart-healthy soluble fibre.

Instructions

1.Preheat oven to 375 degrees F. Prepare muffin tins by lining with paper cups or spraying with non-stick spray.
2.Add buttermilk to oat bran and let stand. Combine flour, baking powder, baking soda and salt; set aside. Beat vegetable oil, egg, sugar and vanilla together. Add buttermilk-bran mixture to liquids and stir well. Add dry ingredients all at once and stir until just combined. Gently stir in blueberries.
3.Spoon batter into prepared muffin tins. Bake 20-25 minutes, until tops are golden.
