10 large, pitted Medjool dates
2/3 cup (150 mL) Rogers Foods Porridge Oats & Ancient Grains
½ cup (125 mL) natural peanut butter
¼ cup (60 mL) chia seeds | |
¼ cup (60 mL) hemp hearts
½ teaspoon (2.5 mL) pure vanilla extract |
1. | In food processor, add pitted dates and process until a thick, sticky ball forms. Then add Rogers Foods Porridge Oats & Ancient Grains and pulse five to six times until the grains break up and begin to incorporate together. Add natural peanut butter, chia seeds, hemp hearts and vanilla extract and process for one minute or until the mixture comes together and all of the ingredients are fully incorporated. |
2. | Remove mixture from the bowl of the food processor onto a large plate. Divide and roll the mixture with wet hands into approximately 15 ping pong ball-sized bites (approximately one tablespoon each). |
3. | On a cookie sheet lined with parchment paper, place the bites so they are not touching each other. Chill in the fridge at least one hour. Serve cold directly from the fridge or transfer to a large-sized container with a lid (do not stack them on top of each other or they will stick). Bites will keep in an airtight container in the fridge for up to five days. |
