1 cup Guinness (dark beer)
1/2 cup butter, cubed
2 cups sugar
3/4 cup baking cocoa
2 large eggs, room temperature, beaten
2/3 cup sour cream
3 teaspoons vanilla extract
2 cups ROGERS FOODS ALL PURPOSE FLOUR
1-1/2 teaspoons baking soda

1-1/2 cups confectioners' sugar
1/2 cup heavy whipping cream

Instructions

1.Preheat the oven to 350°. Grease a 9-in. springform pan and line the bottom with parchment paper; set aside.
2.Heat the beer and butter in a large saucepan until the butter melts. Remove the pan from the heat and whisk in the sugar and cocoa until blended. Combine the eggs, sour cream, and vanilla into the beer mixture. Combine the flour and baking soda and whisk them into the beer mixture until smooth. Pour the batter into the prepared pan.
3.Bake until a toothpick inserted in the center comes out clean, 45-50 minutes. Cool completely in a pan on a wire rack. Remove the cake from the pan and place it on a platter or cake stand.
4.In a large bowl, beat cream cheese until fluffy. Add confectioners’ sugar and cream; beat until smooth (do not overbeat). Frost the top of the cake. Refrigerate leftovers.
5.If you want this as a double-layer cake, double the ingredients to make 2x9 inch cakes.
