Ingredients

1 1/2 cups ROGERS 100% WHOLE GRAIN WHOLE WHEAT FLOUR
3/4 cup ground flax seed
3/4 cup ROGERS OAT BRAN
1 cup brown sugar or coconut sugar
2 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1 1/2 cups shredded carrots
2 medium apples, grated
1 1/2 cups raisins
3/4 cup buttermilk
2 eggs, beaten
1 tsp. vanilla
2 tbsp. oil
These hearty muffins are virtually a meal in a muffin! They are incredibly moist without the use of butter. Nutritious ingredients like Rogers Oat Bran, carrots & apples make it an excellent choice for a morning snack or midday pick me up.

Instructions

1.Preheat oven to 350F. Prepare muffin tin.
2.Mix flour, flax seed, oat bran, sugar, baking soda, baking powder, cinnamon together. Add in carrots, apples and raisins.
3.In another bowl, beat liquid ingredients together. Add to dry mixture and mix (without over mixing).
4.Bake for 20-25 minutes.
5.Take out and let cool for 10 minutes.
