1 1/2 cups (150 grams) Rogers Foods Porridge Oats & Ancient Grains
1 teaspoon (5 grams) baking powder

1 cup (225 grams) cold unsalted butter, cut into small cubes
1 egg, lightly beaten
1 cup (175 grams) dark chocolate chunks
4 teaspoons (20 grams) cornstarch
1 tablespoon (15 mL) lemon juice
3 cups (350 grams) fresh or frozen chopped strawberries
Farm fresh strawberries, dark chocolate and Rogers Foods Porridge Oats & Ancient Grains – yes please! These delicious oatmeal bars are simple to make and are the perfect summertime snack for all of your sun-filled on-the-go activities and road trips this season. The bars can be stored in an airtight container in the refrigerator for up to a week or in freezer for up to 3 months.

Instructions

1.Preheat oven to 375°F (190°C). Grease a 9×13 inch (23 cm x 33 cm) baking pan.
2.In a food processor, mix 1 cup (200 grams) sugar, Rogers Foods All Purpose Flour, Rogers Foods Porridge Oats & Ancient Grains, baking powder, and salt. Add butter and egg, process until the mixture resembles coarse meal. Divide Ancient Grains mixture in half. Pat half of Ancient Grains mixture into the prepared pan. Sprinkle chocolate over Ancient Grains crust.
3.In a large bowl, stir together remaining ½ cup (100 grams) sugar, cornstarch and lemon juice. Gently mix in strawberries. Sprinkle the strawberry mixture evenly over chocolate Ancient Grains crust. Crumble remaining Ancient Grains mixture over strawberry layer.
4.Bake for 45 to 50 minutes, or until top is slightly brown. Cool completely before cutting into squares. Store the bars in an airtight container in the refrigerator for up to a week or in freezer for up to 3 months.
