1 tsp baking powder | |
1 tsp baking soda | |

1/3 cup vegetable oil | |
1 egg | |
1/2 cup sugar | |
1/2 tsp vanilla | |
1 cup blueberries, fresh or frozen |
Delicious blueberry muffins that offer heart-healthy soluble fibre.
1. | Preheat oven to 375 degrees F. Prepare muffin tins by lining with paper cups or spraying with non-stick spray. |
2. | Add buttermilk to oat bran and let stand. Combine flour, baking powder, baking soda and salt; set aside. Beat vegetable oil, egg, sugar and vanilla together. Add buttermilk-bran mixture to liquids and stir well. Add dry ingredients all at once and stir until just combined. Gently stir in blueberries. |
3. | Spoon batter into prepared muffin tins. Bake 20-25 minutes, until tops are golden. |
