Ingredients

1 cup Rogers Foods Whole Grain Whole Wheat Flour
3/4 cup Rogers Foods Oat Bran
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
1/2 teaspoon salt
2 large eggs
1/2 cup plain Greek yogurt
1/3 cup pure maple syrup
1/3 cup unsweetened applesauce
1/4 cup vegetable oil
1 teaspoon vanilla
2 medium ripe pears, skin left on and diced small, approximately 1 1/2 cups
1/2 cup chopped walnuts
Optional topping:
2 tablespoons Rogers Foods Large Flake Oats
3 tablespoons chopped walnuts
1 teaspoon maple syrup

Instructions

1.Preheat oven to 350 degrees F. Lightly grease a 9 x 5-inch loaf pan or line it with parchment paper.
2.In a large bowl, whisk together whole grain whole wheat flour, oat bran, baking powder, baking soda, cinnamon, ginger, nutmeg and salt.
3.In another bowl, whisk the eggs, Greek yogurt, maple syrup, applesauce, oil and vanilla until smooth.
4.Make a well in the dry ingredients, add the wet ingredients to the dry ingredients, and gently stir just until combined.
5.Fold in the diced pears and walnuts. Avoid overmixing.
6.Transfer the batter to the prepared loaf pan.
7.If using the topping, combine oats, walnuts, maple syrup and cinnamon and sprinkle over the loaf.
8.Bake for 50 to 60 minutes, or until a tester inserted in the centre comes out clean.
9.Cool in the pan for 15 minutes, then transfer to a rack to cool.
