Ingredients

1 1/2 cup of Rogers Porridge Oats & Healthy Grains
3/4 cup of Rogers No Additive All Purpose Flour
3/4 cup of brown sugar
1 egg
1/2 cup of unsalted butter, softened
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
1/2 teaspoon of ground cinnamon
1/2 teaspoon of vanilla extract
pinch of salt
3/4 cup of dried cranberries
1/4 cup of pistachios

Instructions

1.Preheat oven to 350°F (177°C).
2.In a large bowl, Rogers Porridge Oats & Healthy Grains, Rogers No Additive All Purpose Flour, baking powder, baking soda, cinnamon, and salt.
3.In a stand mixer, combine butter, vanilla, and brown sugar until creamy. Add in a egg. Mix until combined.
4.Slowly add in the oat flour mixture, mix in stand mixer until just combined.
5.Gently fold in the cranberries and pistachios.
6.Scoop 1 tablespoon of cookie batter on a baking sheet lined with silicone mat or parchment paper placing 2″ apart.
7.Bake for 8-10 minutes.
8.Remove from oven and let cool on wire rack.
