1 1/2 cup of Rogers Porridge Oats & Healthy Grains | |
3/4 cup of Rogers No Additive All Purpose Flour | |
3/4 cup of brown sugar | |
1 egg | |
1/2 cup of unsalted butter, softened | |
1/2 teaspoon of baking soda | |
1/2 teaspoon of baking powder | |
1/2 teaspoon of ground cinnamon | |
1/2 teaspoon of vanilla extract | |
pinch of salt | |
3/4 cup of dried cranberries | |
1/4 cup of pistachios |
A holiday hit that you'll want to make all year round!
1. | Preheat oven to 350°F (177°C). |
2. | In a large bowl, Rogers Porridge Oats & Healthy Grains, Rogers No Additive All Purpose Flour, baking powder, baking soda, cinnamon, and salt. |
3. | In a stand mixer, combine butter, vanilla, and brown sugar until creamy. Add in a egg. Mix until combined. |
4. | Slowly add in the oat flour mixture, mix in stand mixer until just combined. |
5. | Gently fold in the cranberries and pistachios. |
6. | Scoop 1 tablespoon of cookie batter on a baking sheet lined with silicone mat or parchment paper placing 2″ apart. |
7. | Bake for 8-10 minutes. |
8. | Remove from oven and let cool on wire rack. |
