Recipe Alternative
Recipe will make approximately 60 cookies using a standard cookie scoop.

| 1 kg container Festive Fruitcake Mix | |
| 1 1/2 cups coconut, fine shred, unsweetened | |
| 1 1/2 cups golden raisins | |
| 3 cups Rogers No Additive or All Purpose Flour | |
| 3 tsp. baking powder | |
| 3/4 tsp. salt | |
| 1 1/2 cups butter | |
| 1 1/2 cups brown sugar | |
| 3 eggs | |
| 3 tsp. vanilla | |
| 1/2 tsp. almond extract |
| 1. | Preheat oven to 350F. Line 11″ x 17″ sheet pan with parchment paper. |
| 2. | In medium bowl, combine fruitcake mix, coconut and raisins. In another medium bowl, combine the flour, baking powder and salt. |
| 3. | In a large bowl, cream butter and sugar until creamy. Add eggs and extracts and beat well. |
| 4. | Stir in dry ingredients until blended then stir in fruit mixture. |
| 5. | Spread mixture evenly in pan. Bake for 35 minutes, or until golden brown on top and cake tester inserted in the centre comes out clean. Do not over-bake. |
