
| 1-10 oz. (284 mL) can madarin oranges | |
| 1 1/2 cup ROGERS WHEAT BRAN | |
| 1/3 cup vegetable oil | |
| 1 egg | |
| 1/3 cup brown sugar | |
| 1/2 tsp. vanilla | |
| 1 cup ROGERS NO ADDITIVE or ALL PURPOSE FLOUR | |
| 1 tsp. baking soda | |
| 1 tsp. baking powder | |
| 1/2 tsp. salt | |
| 1/2 tsp. nutmeg |
The classic, lightly spiced with juicy mandarins.
| 1. | Preheat oven to 375°F (190°C). |
| 2. | Remove and dice mandarin orange slices into quarters; set aside. |
| 3. | Mix together wheat bran and liquid from mandarin oranges; let stand. Combine oil, egg, brown sugar and vanilla and add to bran mixture |
| 4. | Sift together flour, baking soda, baking powder, salt and nutmeg. Add to first mixture and stir just until blended. |
| 5. | Fold in diced oranges and spoon into prepared muffin cups. Bake 20 – 25 minutes. |
