Instructions

1.Preheat oven to 350°F (175°C). Line 2 baking sheets with parchment.
2.In a bowl, whisk oat bran, flour, baking soda, and salt.
3.In another bowl, cream butter + sugars until fluffy (1–2 min). Beat in egg, vanilla, peppermint, and food colouring (if using).
4.Mix dry ingredients into wet just until combined. If dough seems dry, add milk 1 tbsp at a time.

6.Stir in chocolate chips.
7.Scoop 1.5 tbsp portions onto sheets, spacing 2 inches apart.
8.Bake 10–12 min (edges set, centres slightly soft). Cool for 5 min on the pan, then move to the rack.
