Ingredients

1 1/2 cups ROGERS No Addititve/All Purpose Flour 375 mL
1 cup ROGERS Wheat Germ 250mL
1/2 cup brown sugar
1 tsp baking powder 5 mL
1 tsp baking soda 5 mL
1/2 tsp salt 2 mL
1 cup mashed bananas, (3 medium) 250 mL
1/2 cup milk 125 mL
2 tsp lemon juice 10 mL
1/4 cup vegetable oil 60 mL
2 eggs, lightly beaten
1 tsp vanilla

Instructions

1.Preheat oven to 375°F (190°C)
2.Combine dry ingredients and set aside.
3.In another bowl, combine lightly beaten eggs, oil, mashed bananas, milk, lemon juice and vanilla.
4.Add banana mixture to the dry ingredients and stir until just blended.
5.Spoon into prepared muffin tins. Bake for 30 minutes. Until tested done.
