1 1/2 cups ROGERS No Addititve/All Purpose Flour 375 mL
1 cup ROGERS Wheat Germ 250mL
1/2 cup brown sugar
1 tsp baking powder 5 mL
1 tsp baking soda 5 mL
1/2 tsp salt 2 mL
1 cup mashed bananas, (3 medium) 250 mL
1/2 cup milk 125 mL
2 tsp lemon juice 10 mL
1/4 cup vegetable oil 60 mL
2 eggs, beaten 2

Instructions

1.Preheat oven to 375°F (190°C)
2.Combine first 6 ingredients. Mix well and set aside.
3.In another bowl, combine lightly beaten egg whites, oil, mashed bananas, skim milk and vanilla.
4.Add banana mixture to the dry ingredients and stire until just blended.
5.Spoon into prepared muffin tins. Bake for 30 minutes. Until tested done.
