Ingredients

2 tbsp (30 mL) butter
1 medium cooking onion, chopped
1 cup (250 mL) ROGERS PORRIDGE OATS & ANCIENT GRAINS
¼ cup (60 mL) raisins
¼ cup (60 mL) dried apricots, diced
2 cups (500 mL) low sodium chicken broth
¼ cup (60 mL) fresh parsley, chopped (optional)
Salt and pepper, to taste
This delicious savoury side-dish using Rogers Porridge Oats & Ancient Grains is a great alternative to rice!

Instructions

1.In a non-stick skillet, melt butter over medium heat; add onion and cook, stirring frequently, until softened.
2.Add ROGERS PORRIDGE OATS & ANCIENT GRAINS and cook, stirring, for 1 minute. Stir in raisins, apricots, and broth; cover and simmer over low heat until liquid is absorbed 10 to 12 minutes.
3.Stir in parsley, if using. Season with salt and pepper.
4.The pilaf can be stored in an airtight container in the fridge for two days or in the freezer for up to four months.
