Ingredients

2 cups ROGERS NO ADDITIVE or ALL PURPOSE FLOUR
1 cup sugar
2 tsp. baking powder
1 tsp. baking soda
1 tbsp. cinnamon
1/4 tsp. salt
1/2 cup melted butter
1 egg, room temperature
1 cup buttermilk, warmed
1 1/2 cups peeled, chopped apple
A great back to school lunch addition.

Instructions

1.Preheat oven to 400⁰F (205⁰C).
2.In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon & salt.
3.In a separate bowl, whisk together melted butter, egg and buttermilk.
4.Add to dry ingredients and stir, until just combined. Fold in chopped apple.
5.Spoon batter into muffin tin and bake 20-22 minutes, until golden brown and tops spring back when lightly touched. Transfer to wire racks to cool.
