Ingredients

1 cup ROGERS WHEAT BRAN
3/4 cup buttermilk
1 cup ROGERS WHOLE GRAIN WHOLE WHEAT FLOUR
2 tbsp. ROGERS WHEAT GERM
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/3 cup vegetable oil
1/3 cup brown sugar
1 egg, beaten
1 cup cheddar cheese, grated
1 cup carrot, grated
Not only flavourful, but healthy too!

Instructions

1.Preheat oven to 400⁰F (200⁰C). Prepare muffin tin.
2.In a large bowl combine wheat bran and buttermilk and set aside.
3.Combine flour, wheat germ, baking powder, baking soda and salt.
4.To bran mixture add oil, brown sugar and egg. Beat well. Mix in grated cheddar cheese and grated carrot.
5.Stir dry ingredients into bran mixture until ingredients are just moistened.
6.Spoon into muffin tin. Bake for 20-25 minutes.
