¼ cup (60 mL) dried apricots, diced | |
2 cups (500 mL) low sodium chicken broth | |
¼ cup (60 mL) fresh parsley, chopped (optional) | |

This delicious savoury side-dish using Rogers Porridge Oats & Ancient Grains is a great alternative to rice!
1. | In a non-stick skillet, melt butter over medium heat; add onion and cook, stirring frequently, until softened. |
2. | Add ROGERS PORRIDGE OATS & ANCIENT GRAINS and cook, stirring, for 1 minute. Stir in raisins, apricots, and broth; cover and simmer over low heat until liquid is absorbed 10 to 12 minutes. |
3. | Stir in parsley, if using. Season with salt and pepper. |
4. | The pilaf can be stored in an airtight container in the fridge for two days or in the freezer for up to four months. |
