2 cups (250 mL) peeled, diced fresh apricots | |

¾ cup (175 mL) packed brown sugar | |
1 cup (250 mL) ROGERS FOODS NO ADDITIVE ALL PURPOSE FLOUR | |
1 tsp (5 mL) baking powder | |
¼ tsp (1 mL) baking soda | |
¼ tsp (1 mL) salt | |
¾ cup (175 mL) butter |
1. | Made with Rogers Foods Porridge Oats & Healthy Grains, fresh apricots and dried cranberries, these delicious squares are perfect for the final days of summer and the start of the school year. Scrumptious and fruit forward, they have 3 grams of protein and 3 grams of fibre making them ideal for your morning break or that mid-afternoon slump. The squares can be stored in an airtight container in the refrigerator for up to 4 days or in freezer for up to 3 months. |
2. | Preheat oven to 350°F (180°C). Lightly grease or line a 9″ x 9″ (2 L) cake pan with parchment paper. |
3. | In a medium saucepan add apricots, cranberries, water, orange rind and juice. Simmer, stirring occasionally, until fruit is soft – fork tender. Set aside saucepan to cool completely about 15 minutes. |
4. | In a mixing bowl, combine ROGERS FOODS PORRIDGE OATS & HEALTHY GRAINS, brown sugar, ROGERS FOODS NO ADDITIVE / ALL PURPOSE FLOUR, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. |
5. | Separate the HEALTHY GRAINS mixture into one third and two thirds. Pat two-thirds of the HEALTHY GRAINS mixture into the prepared 9″ x 9″ (2 L) cake pan. Spread the cooled fruit filling over this layer. Then gently press remaining HEALTHY GRAINS mixture evenly over fruit layer. |
6. | Bake for 25 to 30 minutes or until lightly browned. Remove pan from oven, cool for 10 minutes before cutting into 16 squares. Keep squares in an airtight container for 4 days in the refrigerator or for 3 months in the freezer. |
