2.Make the Compote: In a small saucepan over medium heat, combine the mixed berries, maple syrup, and lemon juice. - Stir occasionally until berries soften and the mixture thickens slightly (about 10 minutes). Set aside to cool slightly.
3.French Toast Batter: In a shallow dish, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, and cinnamon until well combined.
4.Assemble the French Toast: Spread a generous amount of the cream cheese filling onto each side of 4 bread slices. Sprinkle your favourite Rogers Foods Granola on top of the cream cheese - Top each with another slice of bread, creating 4 sandwiches.
5.Cook the French Toast: Preheat a large skillet or griddle over medium heat and add a pat of butter. - Dip each sandwich into the egg mixture, ensuring both sides are well-coated. - Place the sandwiches on the skillet and cook until golden brown, about 3-4 minutes per side.
6.Serve: Place the stuffed French toast on plates, spoon the warm maple-berry compote over the top, and add a dusting of powdered sugar if desired. - Serve immediately with extra maple syrup on the side for drizzling.
7.Tips: For added flavour, you can mix some fresh fruit into the cream cheese filling. - If you prefer a non-dairy option, substitute the milk and heavy cream with almond or oat milk.
