1 1/2 cups ROGERS No Addititve/All Purpose Flour 375 mL | |
1 cup ROGERS Wheat Germ 250mL | |
1/2 cup brown sugar | |
1 tsp baking powder 5 mL | |
1 tsp baking soda 5 mL | |
1/2 tsp salt 2 mL | |
1 cup mashed bananas, (3 medium) 250 mL | |
1/2 cup milk 125 mL | |
2 tsp lemon juice 10 mL | |
1/4 cup vegetable oil 60 mL | |
2 eggs, beaten 2 |
1. | Preheat oven to 375°F (190°C) |
2. | Combine first 6 ingredients. Mix well and set aside. |
3. | In another bowl, combine lightly beaten egg whites, oil, mashed bananas, skim milk and vanilla. |
4. | Add banana mixture to the dry ingredients and stire until just blended. |
5. | Spoon into prepared muffin tins. Bake for 30 minutes. Until tested done. |
