
| 2 cups ROGERS NO ADDITIVE or ALL PURPOSE FLOUR | |
| 1 cup sugar | |
| 2 tsp. baking powder | |
| 1 tsp. baking soda | |
| 1 tbsp. cinnamon | |
| 1/4 tsp. salt | |
| 1/2 cup melted butter | |
| 1 egg, room temperature | |
| 1 cup buttermilk, warmed | |
| 1 1/2 cups peeled, chopped apple |
A great back to school lunch addition.
| 1. | Preheat oven to 400⁰F (205⁰C). |
| 2. | In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon & salt. |
| 3. | In a separate bowl, whisk together melted butter, egg and buttermilk. |
| 4. | Add to dry ingredients and stir, until just combined. Fold in chopped apple. |
| 5. | Spoon batter into muffin tin and bake 20-22 minutes, until golden brown and tops spring back when lightly touched. Transfer to wire racks to cool. |
