1 cup ROGERS WHEAT BRAN | |
3/4 cup buttermilk | |
1 cup ROGERS WHOLE GRAIN WHOLE WHEAT FLOUR | |
2 tbsp. ROGERS WHEAT GERM | |
2 1/2 tsp. baking powder | |
1/2 tsp. baking soda | |
1/2 tsp. salt | |
1/3 cup vegetable oil | |
1/3 cup brown sugar | |
1 egg, beaten | |
1 cup cheddar cheese, grated | |
1 cup carrot, grated |
Not only flavourful, but healthy too!
1. | Preheat oven to 400⁰F (200⁰C). Prepare muffin tin. |
2. | In a large bowl combine wheat bran and buttermilk and set aside. |
3. | Combine flour, wheat germ, baking powder, baking soda and salt. |
4. | To bran mixture add oil, brown sugar and egg. Beat well. Mix in grated cheddar cheese and grated carrot. |
5. | Stir dry ingredients into bran mixture until ingredients are just moistened. |
6. | Spoon into muffin tin. Bake for 20-25 minutes. |
